3 Bean Chili

Here is a flavorful chili that can be made on the stovetop or in an instant pot or other pressure cooker.

Three Bean Chili (from an Instant Pot recipe)

Ingredients:

  • 2 cups onion, chopped
  • 1 Tbsp minced garlic
  • 4 carrots, chopped
  • 2 sticks of celery, chopped
  • 1 red bell pepper, chopped
  • 1 cup water or vegetable broth
  • 1 can black beans (or 1 1/2 cup cooked from dried)
  • 1 can pinto beans (or 1 1/2 cup cooked from dried)
  • 1 can kidney beans (or 1 1/2 cup cooked from dried)
  • 1 tsp cumin seeds (or 1 1/4 tsp ground cumin)
  • 2-14.5 oz can diced tomatoes
  • 2 Tbsp mild chili powder
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper, optional

Stove Top Directions:

  1. Saute the onion and garlic in a little water for 3 to 5 minutes.
  2. Add the carrots, celery, and red bell pepper and cook another 5 minutes, adding more water if needed to prevent sticking.
  3. Add the water or vegetable broth, beans, and tomatoes, stirring to combine.
  4. Add the seasonings, stir, and allow to simmer over low heat for 10 minutes.
  5. This is great served over brown rice, quinoa, or a baked potato.

Instant Pot or Pressure Cooker Directions:

  1. Add all ingredients into the instant pot. Set to cook on manual  for 6 minutes with natural release.
  2. This is great served over brown rice, quinoa, or a baked potato.
