Black Bean and Corn Salad

This light and refreshing bean salad is a quick easy meal to enjoy on warm summer days.

Black Bean & Corn Salad (from Rissa and Nathaniel)

Ingredients:
  • 2 cans of black beans, drained and rinsed (or 3 cups cooked from dried)
  • 12 oz frozen corn
  • 1 cup chopped tomatoes
  • 1 small red onion, diced
  • juice of 2 limes
  • 1/2 cup cilantro
  • 1 jalapeno
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
Directions:
  1. Mix everything together in a bowl and chill in the fridge before serving. Great eaten as is, or use it as a taco filling or as a salsa.
