Copycat Larabars

Larabars are a great snack to travel with – they are easy to grab-and-go and they are made with very few whole ingredients, nothing added! Just dates, nuts, and some flavors have spices, extra dry fruit, lemon or lime juice, cocoa powder, or extracts. These bars are surprisingly easy to make at home and you can get a lot more for your money making your own. Below are 18 different flavor variations you can try!

Copycat Larabars (from Budget 101)

Directions for all Larabar variations:

  1. Combine all the ingredients in a food processor* and pulse about 30-45 seconds (or more if necessary). The mixture should stick together well (pinch it with your fingers to test!).
  2. Line a loaf pan with parchment paper or plastic wrap. Pour the processed bar mix into the pan, fold the other half of the wrap over the mix and press firmly so the mixture will stick together well.
  3. Place in the fridge for about an hour and then cut into bars, roll into snack balls, or even cut in the shape of cookies.
  4. These copycat larabars can be individually wrapped and stored in the fridge for fast on-the-go snacking. They also freeze well.

*If the fruit is really tough or extra chewy, it can be soaked in 1/3 cup of warm water for 10 minutes, then drained and processed according to the directions above.

**When using dry fruit, make sure to buy the unsweetened kind.
