Spanish Rice

There are many ways you can eat this flavorful Spanish rice – enjoy just as it is, with some beans and fresh vegetables, in a salad, or in a wrap with beans and lettuce. This recipe can be made stove top or in the Instant Pot.

Spanish Rice (from Brand New Vegan)

Ingredients:
  • 1 onion
  • 1 red bell pepper
  • 3 cups brown rice
  • 4 cups low sodium vegetable broth
  • 1 tbsp chili powder
  • 1/2 tbsp ground cumin
  • 2 cups low sodium salsa

Stove Top Directions:

  1. Chop the onion and red bell pepper and add them into a large pot.
  2. Add a splash of water and saute the veggies over medium-high heat, stirring occasionally, until soft.
  3. Add the vegetable broth and spices and stir to combine.
  4. Rinse your rice well until the water runs clear, then add it to the pot along with the salsa and stir to combine everything.
  5. Bring to a boil then reduce to low heat and allow to simmer for about 40 minutes, until the rice is fully cooked.
  6. Stir every so often and add more liquid (water or vegetable broth) as needed.
  7. Once the rice is cooked, fluff it with fork and serve.
Instant Pot Directions:
  1. Chop the onion and red bell pepper and add them into your instant pot.
  2. Add a little water to the instant pot and press the saute button. Saute the veggies, stirring occasionally, until soft.
  3. Add the vegetable broth and spices and stir to combine.
  4. Rinse your rice well until the water runs clear, then add it to your instant pot and stir to combine.
  5. Add the salsa to the center of the pot and DO NOT STIR.
  6. Attach the lid, make sure vent is turned to seal, and cook on manual, low pressure for 20 minutes.
  7. Allow the pressure to release naturally.
  8. Fluff rice with fork and serve.
