Sweet Potato Hummus

Hummus is really easy to make. Toss some ingredients in your food processor and blend it all together. And there is so much more you can do with hummus than just dipping in a variety of veggies, although that is one of our favorites! You can also add hummus on top of baked potatoes, use it as a salad dressing, or as a sauce for your pasta.

Sweet Potato Hummus (from Evolving Table)


  • 1 large sweet potato
  • 1 cup chickpeas
  • 1/4 cup lemon juice
  • 1 garlic clove
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 3-4 tbsp water


  1. Preheat oven to 400 degrees.
  2. Bake sweet potato for 45 minutes to 1 hour, until soft.
  3. Once the sweet potato is baked and cooled, in the bowl of a food processor combine the beans and lemon juice. Process for 1-2 minutes, scraping the sides of the bowl halfway through.
  4. Add garlic, cumin, and smoked paprika. Process for 1-2 more minutes.
  5. Lastly, add roasted sweet potato (not the skin) and water (start with 3 tbsp).  Process for another 1-2 minutes, or until desired consistency, adding another tbsp of water if needed.
